Finger Limes aka Caviar Limes have a thin, green/yellow/red rind with very strong citrus aroma. What makes these Limes unique, is the fact that they are shaped like fingers, and when squeezed produce very little juice. They contain "pods" or "pearls" that contain the lime juice. These pods have a very similar "popping" texture like that of caviar. This is one of the more difficult to find varieties of lime. Native to Australia, there are a few farmers that grow these limes in the United States.
